Preheat Oven
Preheat your oven to 425°F (220°C).
Prepare Potatoes
Place the potato wedges in a large baking dish or roasting pan. Add garlic cloves evenly throughout.
Season & Dress
Season generously with sea salt and black pepper. Sprinkle with dried oregano, then pour in the lemon juice, Dimitri Olive Oil, and water. Mix well to coat all the potatoes evenly.
Roast
Cover the pan with parchment paper and foil to lock in moisture. Bake for 40 minutes.
Uncover & Crisp
Remove the covering and roast for an additional 15–20 minutes, or until the potatoes are golden brown with a crisp, herb-crusted finish.
