Greek Lemon-Roasted Potatoes

Crispy on the outside, tender on the inside, these Greek Lemon-Roasted Potatoes are the ultimate Mediterranean comfort food.

Ingredients:

  • 8 large potatoes, peeled and cut into large wedges (5–6 wedges per potato)

  • 6 garlic cloves, peeled and slightly crushed

  • 2 cups Dimitri Extra Virgin Olive Oil or Dimitri Lemon Infused EVOO

  • 3 tbsp dried oregano

  • Juice of 2 lemons

  • Sea salt and freshly ground black pepper, to taste

  • 1/2 cup water

Infused with zesty lemon juice, aromatic garlic, and the robust flavor of Dimitri Extra Virgin Olive Oil (or Lemon-Infused EVOO), this dish brings bold, rustic Greek flavors straight to your table. A generous sprinkle of oregano and a golden oven roast give each wedge its signature herb-crusted finish. Perfect as a hearty side for roasted meats, grilled seafood, or on their own with a dollop of tzatziki.

Directions:

  1. Preheat Oven
    Preheat your oven to 425°F (220°C).

  2. Prepare Potatoes
    Place the potato wedges in a large baking dish or roasting pan. Add garlic cloves evenly throughout.

  3. Season & Dress
    Season generously with sea salt and black pepper. Sprinkle with dried oregano, then pour in the lemon juice, Dimitri Olive Oil, and water. Mix well to coat all the potatoes evenly.

  4. Roast
    Cover the pan with parchment paper and foil to lock in moisture. Bake for 40 minutes.

  5. Uncover & Crisp
    Remove the covering and roast for an additional 15–20 minutes, or until the potatoes are golden brown with a crisp, herb-crusted finish.

Serving Suggestion:

Serve hot, garnished with extra oregano or lemon zest. Pairs perfectly with grilled lamb, roasted chicken, or as a standalone vegetarian dish.
