Ingredients:

  • 1 pint FAGE Greek yogurt (or any thick, plain Greek yogurt)

  • 1 English cucumber

  • ⅓ cup Dimitri Extra Virgin Olive Oil (DEVOO)

  • 1 Tbsp Greek red wine vinegar 

  • 1 Tbsp minced fresh dill

  • 3 garlic cloves, mashed to a paste (adjust to taste)

  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prep the Cucumber
    Peel and finely grate the cucumber. Sprinkle lightly with salt, then squeeze the grated cucumber firmly between your hands (or in a cheesecloth) to remove excess water. This keeps the tzatziki from becoming watery.

  2. Mix the Base
    In a mixing bowl, combine the Greek yogurt, grated cucumber, and Dimitri Extra Virgin Olive Oil. Stir until well blended.

  3. Add Flavor
    Stir in the red wine vinegar, fresh dill, and mashed garlic. Add salt and black pepper to taste. Feel free to adjust the garlic level depending on how bold you want the flavor.

  4. Chill and Serve
    Refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve cold with grilled meats, pita bread, roasted vegetables, or as a fresh topping for sandwiches and grain bowls.
