1 cup DEVOO olive oil
½–1 kg (1.1–2.2 lbs) fresh spinach, cleaned and chopped (including stems)
½ cup chopped dill (more or less, to taste)
½ cup chopped parsley
1 large onion, finely chopped or grated
1 large leek, chopped (optional)
1 large tomato, grated or chopped
1 cup white rice, rinsed
2 cups water

Infused with zesty lemon juice, aromatic garlic, and the robust flavor of Dimitri Extra Virgin Olive Oil (or Lemon-Infused EVOO), this dish brings bold, rustic Greek flavors straight to your table. A generous sprinkle of oregano and a golden oven roast give each wedge its signature herb-crusted finish. Perfect as a hearty side for roasted meats, grilled seafood, or on their own with a dollop of tzatziki.
In a large pot, heat olive oil over high heat.
Add spinach, dill, parsley, onion, leek (if using), and tomato. Stir occasionally until mixture starts to boil.
Reduce heat to medium-high and cook uncovered for 10 minutes, stirring occasionally.
Add water and rice. Stir well.
Bring to a boil, then lower heat and simmer uncovered, stirring occasionally, until the rice is tender and most of the liquid is absorbed.
Serve warm, accompanied by lemon wedges and optional feta cheese. A drizzle of extra olive oil on top brings it all together.
