Traditional Greek Fava

Fava is a silky, flavorful purée made from yellow split peas, simmered with onion and carrot, and blended with rich olive oil.

Ingredients:

  • 1 kilo yellow split peas

  • 1 large onion, sliced

  • 1 carrot, sliced

  • 1 cup DEVOO olive oil

  • Salt and freshly ground pepper, to taste

  • Optional toppings: capers, caramelized onions

Often topped with capers and caramelized onions, Fava is a traditional Greek appetizer that’s both humble and deeply satisfying.

Directions:

  1. Pour enough olive oil into a large pot to coat the bottom.

  2. Add the sliced onion and carrot. Sauté gently until golden and softened.

  3. Rinse the split peas thoroughly under running water.

  4. Add the split peas to the pot with enough water to cover them by about 3 cm.

  5. Simmer uncovered, stirring occasionally, until the peas have absorbed the water and softened completely (add more water if needed).

  6. Blend the mixture in a food processor until smooth and creamy.

  7. Stir in salt, pepper, and additional olive oil to taste.

Serving Suggestion:

Serve warm or at room temperature, topped with capers and caramelized onions, and accompanied by fresh bread or pita.
