Spinach Artichoke Dip

This creamy dip blends Greek yogurt, reduced-fat cream cheese, and plenty of savory Parmesan with tender spinach and artichokes.

Ingredients:

  • 5 tablespoons DEVOO olive oil

  • 3 garlic cloves, peeled and diced

  • 2 cups nonfat Greek yogurt

  • 8 oz reduced-fat cream cheese

  • 1½ cups Parmesan cheese

  • 15 oz artichoke hearts, drained and lightly chopped

  • 10 oz frozen spinach, thawed and very well drained

  • ½ teaspoon red pepper flakes

Directions:

  1. In a pot over medium heat, warm the olive oil and sauté the garlic until fragrant (about 1 minute).

  2. Add the yogurt, cream cheese, Parmesan, spinach, artichokes, red pepper flakes, salt, and pepper.

  3. Cook, stirring often, until all the cheese is melted and the mixture is fully combined.

  4. Let it simmer for 2–3 minutes to bring the flavors together.

  5. Remove from heat, transfer to a serving dish, and enjoy warm with pita, crackers, or veggies.
