In a small jar with a tight-fitting lid, combine the olive oil, lemon juice, oregano, salt, and pepper.
Seal and shake well until the mixture is fully blended.
Use to brush onto meat or fish during cooking, and reserve some for serving at the table.
Shake or stir before each use, as the oil will naturally separate.
