Greek Style Peas-Arakas

Arakas is a comforting, olive oil-rich stew, perfect for a light yet satisfying meal.

Ingredients:

  • 1 pound peas (fresh or frozen)
  • 1 onion diced
  • 2 carrots sliced
  • 1 potato cut into bite-sized pieces
  • Sea salt and freshly ground black pepper, to taste
  • 1/2 cup water
  • 2 medium grated tomatoes
  • 1⁄2 cup DEVOO olive oil
  • 2-3 tbsp chopped dill

Directions:

  1. Heat olive oil in a medium pot over medium heat.

  2. Add diced onion and sauté until soft.

  3. Stir in carrots and potatoes; sauté for another 3–4 minutes.

  4. Add peas and mix until well coated in the oil.

  5. Stir in grated tomato, chopped dill, pepper, and ½ teaspoon salt.

  6. Add about ¼ cup hot water—just enough to barely cover the peas.

  7. Mix well and bring to a boil.

  8. Lower heat and simmer uncovered for about 30 minutes, until peas are soft and water is absorbed. The dish should be left with only the rich olive oil.

  9. Adjust salt to taste.

Serving Suggestion:

Serve at room temperature with a side of feta cheese and crusty bread for a traditional Greek table experience.
