Braised Cauliflower

This traditional Greek braised cauliflower is a comforting, spiced dish simmered in olive oil and tomato paste.

Ingredients:

  • 1 head cauliflower, washed and separated into medium florets

  • ½ to ¾ cup olive oil

  • 1 potato, cut into small pieces

  • 2 tbsp tomato paste

  • 3 allspice berries

  • 1 stick cinnamon

  • 3 whole cloves

  • Salt and pepper to taste

  • Hot water (as needed)

  • Optional: Feta cheese for serving

Directions:

  1. In a large pot, heat the olive oil over medium heat.

  2. Add cauliflower florets, potato pieces, allspice, cinnamon, cloves, and pepper. Sauté until the cauliflower begins to brown slightly.

  3. Stir in tomato paste and 1 teaspoon salt. Let it heat through for a minute.

  4. Add enough hot water to cover the cauliflower about halfway. Stir gently.

  5. Lower the heat and arrange the cauliflower so the stems face down.

  6. Cover the pot and simmer for 30–50 minutes, until the cauliflower and potatoes are tender.

Serving Suggestion:

Serve warm or at room temperature, accompanied by a spoonful of the flavorful sauce and a crumble of feta cheese on top. Pairs well with crusty bread or a simple green salad.
