Baked Butter Beans

This rich, herb-packed butter bean dish brings together creamy beans, briny olives, and aromatic dill in a savory olive oil and white wine sauce.

Ingredients:

  • 1 lit boiled butter beans
  • 120g stoned green olives, stuffed with pimiento peppers
  • 3 tbsp garlic, cut in to thin slices
  • 125ml DEVOO olive oil
  • 125 ml dry white wine
  • 1 chili pepper or cayenne pepper
  • 375 ml fresh dill, finely chopped
  • 375 ml water
  • Salt to taste

Directions:

  1. Preheat oven to 200°C (392°F).

  2. Soak the olives in hot water for 10 minutes, then rinse under lukewarm running water and cut into quarters.

  3. In a deep frying pan, sauté the garlic in DEVOO olive oil for 30 seconds over medium heat.

  4. Add the white wine, olives, and water to the pan. Simmer briefly to combine flavors.

  5. Place the boiled butter beans in a baking dish and season with salt to taste.

  6. Pour the contents of the pan over the beans and add 1 cup (about 125 ml) of chopped dill.

  7. Bake for 1 hour. Then turn off the oven and let the dish rest inside for 15 more minutes.

  8. Before serving, sprinkle with the remaining chopped dill.

Serving Suggestion:

Serve warm with toasted bread or alongside grilled fish or chicken for a bright, satisfying side.
